A lifelong Westport resident, Beth Branshaw opened the Westport Bayside B&B in May of 2007. It continues to serve as her home, and she has created a welcoming, homelike ambiance for her guests.
Westport Bayside Bed and Breakfast engages in practices that promote the sustainability of our natural resources. Our purchasing reflects these values, and we make every effort to cooperate with those who share this determination.
What can people expect upon awakening in the morning? Beth explains:
Our guests may awaken to the aroma of freshly ground coffee, which is ready at 7:30 am. The teapot is busily bubbling the hot water at that time. We have coffee, organic tea, cocoa, spiced cider, orange juice, and apple juice.
Around 8 am, as the first people move about, I like to turn on some tranquil jazz music to soften the quiet of the house. Next might be the smell of cranberry sausage frying. A local fare from the meat/sausage-making shop two miles up the road, Bay City Sausage.
There is the usual pot and pan clatter as I quietly work in the kitchen as all guests roust themselves. Breakfast is served at 8:30. I don't serve all the following at one time: I rotate several tried and true recipes. Strawberries Belgian Waffles, Stuffed French Toast, Blueberry Pancakes, Swedish silver dollar-sized pancakes with a side of lingonberry sauce straight from my Swedish grandma's recipe. I use fresh bread from Arlan's Oven (Arlan is a retired fisherman who opened a bakery up the hill from the B&B), jams/jellies from our local farmers market, eggs, and Finn potatoes from Lily Lane Farm.
I like to share the fact that I try very hard to serve local products. I tell my guests I serve a ROBUST breakfast. We always start with a fruit parfait which is lowfat vanilla yogurt topped with sliced, seasonal fruit. If I have only two or four guests, I can and will ask what they want, high protein or carbs, and go from there!
